
Our story
Gluten Freedom Bageri was born from a love of baking and a journey of transformation. As an experienced chef, I discovered my passion for baking during the quiet of the COVID-19 lockdown. It started with sourdough bread that filled our home, delighting my partner and friends. But everything changed when I was diagnosed with coeliac disease, forcing me to give up traditional bread and pastries.
Rather than letting that be the end of my baking journey, I turned it into an opportunity. I immersed myself in gluten-free recipes, experimenting and perfecting techniques to recreate the flavours and textures I loved.
This journey wasn’t just about adapting to a new diet. At the same time, I faced burnout from the high demands of restaurant life and battled personal struggles, including overcoming a drinking problem. Baking became my therapy—a way to heal, rediscover myself, and channel my passion into something meaningful.
Two years later, I’m proud to say that Gluten Freedom Bageri is more than a bakery. It’s a testament to resilience and the joy of creating something beautiful from life’s challenges. Every recipe at Gluten Freedom Bageri is personally crafted by me, blending creativity and care. My partner plays an equally important role as the operational brain behind the brand—bringing fresh ideas, executing my vision, and ensuring everything runs smoothly. Together, we’re a team driven by a shared goal: to make others feel cared for and happy with every bite.
"Bageri" comes from Danish, meaning "bakery," and is a nod to my love and inspiration drawn from the charm and artistry of Danish bakeries.
